Bandwidth won't be the issue.
Take a normal server room. You interconnect as fast as possible
between switches, and cabinets. Preferably multiple 10GE channels
bonded together.
Then you make sure your servers are at multiple 1GE channels.
So long as your clients are all at 100MB, you can support a greater
number of them.
Likely the 100Mb limit is what current switching technology is able to
handle when you have 100s of customers potentially connected to the
same switch.
